1⁄4 cauliflower
40g fresh white mushrooms in strips
10g of broccoli
1/2 grated carrot
1⁄4 onion
1 clove of garlic
Chopped fresh parsley
5g red peppers cut into strips
1⁄4 of mango
35g red cabbage cut into julienne strips
1 lime
Salt
Olive oil
1. Cook the broccoli cut into small florets in boiling water and salt for 15 minutes.
2. In a frying pan, sauté the onion and chopped garlic in olive oil.
3. When they begin to brown, add the mushrooms.
4. Cook over high heat until they begin to reduce in size and add the broccoli, pepper and grated carrot.
5. Cook a little more, stirring all the time, and add the red cabbage and diced mango.
6. Put the cauliflower in a blender and blend until it has a texture like rice.
7. Add the cauliflower to the vegetable mixture, season with lime, chopped parsley and a drizzle of olive oil and mix.
