1 cup of gluten free oat flour
2 cups of Pancake & Waffle Mix Original Iswari
1 teaspoon of yeast
½ cup of Coconut Sugar Iswari
1 cup and a half of vegetable drink
1 tablespoon of lemon juice
1 cup of fresh or frozen red berries
1 lemon zest
Preheat oven to 180 degrees C.
In a bowl, mix the vegetable drink with the lemon juice and zest. Let it rest.
In another bowl mix all the dry ingredients.
Mix all the ingredients and mix with a spatula until you get a creamy dough.
Add ¾ of the red berries to the dough, and fold again.
Grease a small, rectangular or square-shaped pan with coconut oil or olive oil, and pour the dough inside.
Take the remaining red fruits and arrange them on top, gently pushing each one down, so that they enter the dough a little.
Place in oven for about 40 minutes.
