Pancakes
1 cup oat flour
1 cup oat or soya milk
1 tsp vanilla extract
1 banana
1 tbsp almond butter
2 tbsp maple syrup
1 tbsp baking powder
1 tbsp Iswari super vegan protein
1 tbsp Iswari maca powder
Some coconut oil for frying
Almond Caramel Sauce
2 tbsp almond butter
4 tbsp maple syrup
6 tbsp oat or soya milk
1 tsp Iswari maca powder
Pinch of salt
Garnish
Handful fresh strawberries
Handful fresh raspberries
Pancakes
1. Add the oat flour, soy/oat milk, banana, almond butter, maple syrup, baking powder, protein powder and maca powder to your blender and blitz for a couple of minutes until completely smooth.
2. Transfer the mixture to a large bowl.
3. Heat a little coconut oil in a frying pan to a medium heat.
4. Once heated, spoon the mixture onto the pan (about 2-3 tbsp of mixture per pancake).
5. Allow them to fry for a couple of minutes before placing the frying pan under the grill (broiler) to cook the top part for another minute or so.
6. Repeat this process until all the mixture has been used up.
Almond Caramel
1. Add all the ingredients to your high speed blender and blitz until smooth.
2. If there are still visible lumps after blending you can also pass the mixture through a sieve to ensure that the caramel is completely smooth.
3. Stack the pancakes, with a spoonful of the caramel sauce in between each one.
4. Garnish with fresh strawberry and raspberries.
5. Serve immediately.
