1 1/2 cups Iswari Buddha's Awakening Morning Protein
1 cup oat flour (or ground almonds)
4 tbsp coconut oil, melted
3-4 tbsp maple syrup (to taste)
1/2 tsp vanilla extract
Pinch salt
For the filling
1 1/2 cups coconut yoghurt
Zest one lemon
Freshly-squeezed lemon juice, to taste (optional)
Maple syrup, to taste
To top
Fresh fruits
Drizzle maple syrup (optional)
1 - In a mixing bowl, stir together all ingredients for the tart bases until well combined.
2 - Press the mixture into loose-bottomed mini tart tins, working it up the sides.
3 - Press down tightly using the back of a spoon or your finger so the mixture holds together well.
4 - Pop in the fridge to firm up for a few hours or overnight.
5 - Once ready to serve, mix your yoghurt with the lemon zest, lemon juice
and maple syrup.
6 - Spoon into the tart cases, then scatter over fresh fruits and
a drizzle of maple syrup.
7 - Serve immediately and enjoy!
