Recipe: Crepe with Tomato and Arugula

Ingredients

50g Wrap Instant Mix

100ml vegetable drink

1 teaspoon lemon juice

4 tablespoons vegetable Greek yoghurt

1 tablespoon chopped chives

Cherry tomatoes

Arugula


Method

Add the wrap mixture and vegetable drink to a bowl and mix well.

Heat a little olive oil in a large frying pan and add half of the crepe mixture, it should form an even layer. 

Cook for 2 minutes, turn over and cook for a further 1 minute.

Mix the yoghurt and chives and serve on top of the crepes with tomatoes and rocket.
