For 6-8 Pancakes
1 cup Iswari Buddha’s Awakening Morning Protein
1 tbsp baking powder
3 tbsp coconut sugar
1 tsp maca powder
3 bananas
1 cup oat milk
1 tsp apple cider vinegar
1 tsp vanilla extract
Some coconut oil for frying
¼ cup pecans
1 - In your blender blitz 1 banana, oat milk and apple cider vinegar.
2 - In a large bowl combine the Iswari Buddha’s Awakening, 2 tbsp coconut sugar and baking powder.
3 - Add the wet mix to the dry ingredients and whisk well.
4 - Allow the batter to rest for 5 minutes.
5 - Heat a little coconut oil in a non-stick pan on a medium heat.
6 - Add a ladle of the pancake batter to the pan and cook for a couple of minutes until bubbles begin to form on the surface. Flip and cook on the underside for another minute or so.
7 - Continue until you have used up all the batter.
8 - Slice the remaining bananas into coins.
9 - Heat some coconut oil in a saucepan and fry the banana coins for a couple minutes on each side.
10 - Add 1 tbsp of coconut sugar and cook for another minute or so until caramelised.
11 - Stack the pancakes, adding the caramelised banana and pecans on top.
12 - Pour coconut nectar or maple syrup on top to serve.
